A family dessert
The Panese family preserves one of Italy’s oldest traditions linked to the art of baking. The surname itself has its roots in history: “Panese” was attributed to bread bearers in the Holy Land, a symbol of a deep connection with bread, still represented today in the family crest with two lions holding a basket. In the 1920s, Santo Panese opened a small bakery in Salento, which over time grew from a family business to a fully-fledged bakery. Today, Panese is a benchmark for a rapidly growing international market.
The iconic Pasticciotto Panese
At the heart of the Panese offering is the Pasticciotto leccese, a symbol of Salento’s pastry tradition. Made according to a traditional recipe, it is made from a crumbly, golden, and fragrant shortcrust pastry, prepared with the highest-quality ingredients. Each ingredient, from eggs to milk to black cherries, is selected for its authentic flavor. The balanced baking process enhances the texture and flavor, while the shapes and weights are designed for professional service.
